Chicken Parmesan (Crock Pot)

Monday = crock pot recipe

INGREDIENTS:

  • 36 oz raw boneless, skinless chicken breasts – should yield 4 ~ 6 oz portions (4 Leans)
  • 2 cups crushed tomatoes – less than 5 g carbs per 1/2 cup serving *I used a 28 oz can but measured out 1/2 cup to eat per serving (4 Greens)
  • 1/2 tsp Italian Seasoning (1 Condiment)
  • 1 tsp Basil (1 Condiment)
  • 1/4 tsp Onion Powder (1/2 Condiment)
  • 2 cloves garlic (2 Condiments)
  • 2 tbsp Grated Reduced Fat Parmesan Cheese (2 Condiments)

DIRECTIONS:

  1. Place chicken in a slow cooker.
  2. Combine all the other ingredients in a medium bowl.
  3. Pour over chicken.
  4. Cook on low 6 to 8 hours.
  5. Serve with 1/2 cup sauce.

YIELDS: 4 Servings

PER SERVING: 1 Lean (6 oz Chicken), 1 Green (1/2 cup Sauce), and 1.6 Condiments per serving
